The symbol for Captain Crewe is a soldier because he is ready to fight any kind of battles for his daughter. 

The symbol for Ms. Minchin is a chameleon for she changes her attitude based or directed to her own advantage.

The symbol for Lavinia is an eagle because she is always looking for a "prey." 

The symbol for Ermengarde is a padlocked book because she does not seem to care about the importance of reading books though she has plenty of them. 

The symbol for Lottie is a wondering face because she is a little girl longing for the love of a mother.

The symbol for Mr. Carmichael is the scale of justice because he is the one who gave justice to the death of Captain Crewe. One of the reasons why he died is because of Mr. Carrisford. If Mr. Carmichael did not help Mr. Carrisford find Sara then the miserable life of Sara could continue. If it continues, the death of Captain Crewe will be useless. 

The symbol for Mr. Carrisford is a bleeding heart because he became ill looking for Sara. It worries him so much because his business partner died with a heavy heart.
